Sparkling Strawberry & Thyme Cocktail


The weather in Chicago has been crazy, we have been fluctuating between 50° and 80° over the past week. Even though we are into October this heavy heat had settled over the city, clinging on to summer and not letting go! I could not pass up the opportunity for one last summer drink to take the edge off this heat. And perfect timing because that night we plummeted down to 40° and I don’t think it is going to get back up.


For Strawberry Juice

  • 1 C Frozen Strawberries

  • 1 ½ C Water

  • ½ Orange Juice

  • 1 Tbsp Sugar

  • 1 Tsp Salt

Yields About 3 C


Per Cocktail

  • 2 ½ Oz Strawberry Juice

  • 1 ½ Oz Vodka

  • 1 Squeeze of Lemon

  • 3 Sprigs of Fresh Thyme

  • Top off with Tonic

  • Lemon Wedge for Garnish


Bring strawberries, water, orange juice, salt and sugar to a simmer in a small saucepan. Allow to cook for 10 minutes, once cool bled together and set aside. Give the juice time to cool down, preferably make this in advance that way it can be chilled in your fridge. Who wants warm juice in their cocktail, all it does is melt the ice and create an overly watered drink.


In a shaker muddle, fresh thyme with vodka then combine juice, a squeeze of lemon and ice. Shake, Shake, Shake. Pour over ice in a highball glass and finish off with tonic. Garnish with a wedge of lemon and a sprig of thyme. Cheers!
