Peach Moscow Mule

A good dinner is nothing without a good cocktail to wash it down. It has been a hot couple of days in Chicago with enough humidity to make my hair stand on end. The best remedy to the uncomfortable heat? Fresh bright mint paired with crisp ginger beer and a whole lot of ice. What does this make? Moscow Mules of course, and it is late summer so why not make it a Peach Mule! The peaches have been heavenly the past few times I have gone to the store so I could not resist.



For Puree

2 Peaches, Blanched and Skinned

¼ C Water (Optional)

¼ C Sugar (Optional)

Per Cocktail:

1 Tbsp Peach Puree

4 Mint leaves

1.5 oz Vodka

Ginger Beer

1 Tbsp Peach Puree (or Desired Amount)




Be forewarned...I made a lot of peach puree (about 2 cups) with only two peaches, but It can be a fun thing to have on hand for pancakes, or your morning oatmeal, or over ice cream, or more cocktails. But I digress...


We want to peel our peaches and the best way to accomplish this without making the biggest mess is to lightly boil them. Score an ’X’ into the non-stem end of the peach and place in a pot of water on medium heat. Allow water to come to a boil, immediately place peaches in cold water to stop the cooking process and make them easier to handle. From here you can use a small knife to begin to peel the skin beginning at the ‘X’, the skin should pull easily off without damaging the fruit.



Remove the pit and blend peaches until you get a smooth puree. I am personally not a fan of sweet drinks, and honestly, the peaches I got were sweet enough on their own. However, if you have a more defined sweet tooth you can combine equal parts sugar and water in a saucepan to make a simple syrup. Blend this syrup in with your peaches.


TIP: When making simple syrup you tend to make way more then you need, if you place it in an airtight container it should last up to 3 weeks in the refrigerator. Once you add flavor (peaches) it goes bad quicker only lasting about one week.


Muddle mint leaves in individual glasses with about 1 Tbsp of the puree (more depending on your desired peach flavor). Add vodka, ice, top with ginger beer, and give a good stir!
