We had a casualty in the kitchen this episode! R.I.P to my cheese grater, you served me for many years and I am sorry Bill didn’t know his own strength while we made our Cheesy Broccoli and Cauliflower Soup.
Luckily, Bill made bread! So I guess I will forgive him for this...and for losing my cutting board behind my fridge. Join us as he tries to walk me through the bread-making process and our trials in soup making to dip it in. Don’t forget a glass of Gingerbread Coffee with Baileys!

Cheesy Broccoli & Cauliflower Soup


User Tips

We added a bit less of the required amount of broccoli and cauliflower, stopping when the flowerets were at the top of the broth.
After cooking broccoli and cauliflower until tender blend in a food processor to smooth out.
While making your roux we needed to use half an onion and the whites of three green onions, saving the greens as toppings for later.
To make the roux creamy we added 1 C of half and half instead of milk (I forgot the milk!)

We used 4oz of Havarti cheese with horseradish and 8oz cheddar. Honestly the horseradish was a wonderful addition! It had a subtle heat that really cut through all that cheese. I would go for a little more next time.
We topped each bowl with chopped green onions and a sprinkle of Hungarian paprika.
Gingerbread Coffee with Baileys
One of my favorite wintertime treats is the gingerbread latte from Starbucks. I vibe with it over the snowy season because it is a flavor that is actually not too sweet. All warm and spicy and wonderful, until it is no longer available! That is right, there was no gingerbread latte this year. So I made my own! I will not be denied! And I made it better because there is Baileys.
For Gingerbread Flavoring

2 Tbsp Molasses
¼ C Brown Sugar
½ Tsp Ground Cinnamon
½ Tsp Ground Ginger
½ Tsp Ground Allspice
½ Tsp Ground Nutmeg
⅛ Tsp Salt
Per Drink
8oz Fresh Coffee
1 Tsp Flavoring
1 ½ oz Baileys
In an airtight container combine molasses, sugar, and all spices. Mix together and add 1 tsp to the bottom of each coffee cup and stir in Baileys until blended. Top with hot coffee and enjoy on a cool night!
