Blueberry-Mint Mimosas



Every good brunch needs a good cocktail! I know I know...mimosas are brunch’s bread and butter. Easy and delicious, orange juice and champagne. But sometimes you may want to change it up, serve something else with the bubbly.


Why not Blueberry-Mint Mimosas, a little change to the classic that still pairs beautifully with breakfast. And it is a gorgeous color!


Blueberry-Mint Mimosas



For Juice

  • 1 C Frozen Blueberries

  • 2 C Water

  • 1 Tbsp Orange Zest

  • 3 Tbsp Lemon Juice

  • ⅛ Tsp Salt

  • 1 Tbsp Sugar

For Mimosa

  • 3 Mint Leaves

  • 2 Oz Blueberry Juice

  • Champagne


In a medium saucepan over low heat combine blueberries, water, lemon juice, salt, sugar, and zest. Bring to a simmer and stir occasionally until the sugars melt and the blueberries become soft. About 10 minutes.







Blend fruit until smooth and send it through a sieve to separate the skins of the blueberries. Store in an airtight container and allow to cool, who wants warm juice with their cocktail? No one.






In your glass of choice, muddle mint leaves with blueberry juice. If you don't want to keep the leaves floating around in your drink you may opt to muddle the juice in a separate container and strain into your chosen drinking vessel. I for one like to chew on mint leaves when my drink is finished so I did not mind leaving them in.


Add a few ice cubes, some frozen blueberries, and top with Champagne! For an extra touch zest an orange over the completed cocktail to add a vibrant citrus aroma.
